# Walk-In Cooler Organization With Custom Beer Shelving

Published by [Cooler Concepts](https://beercooler.kegracks.com/blog/author/cooler-concepts) on Oct 29, 2026, 1:59:21 PM

It is Friday afternoon and the delivery just landed. A bartender needs the IPA that has moved all week. It sits behind two kegs of the seasonal, next to a stack of seltzer cases. Reaching it means moving four things. Putting them back means moving four more.

Most walk-in cooler organization problems look like this. The cooler is not a mess. The layout just makes every pull take longer than it should.

## **Why does walk-in cooler organization break down?**

Beer coolers rarely start disorganized. They drift. A new tap handle adds a keg size. A canned program adds cases. A busy weekend leaves overflow kegs wherever there is room.

Each change is small. Over time, the cooler gets stocked around what fits at the moment, not around how staff work in it. The beverage program changed. The shelving did not.

Organization breaks down when storage is not planned around the keg mix, the access path, and the order in which products move in and out.

## **What problems show up first in a disorganized beer cooler?**

The same six problems appear in bars, hotels, restaurants, and venues.

**Overflow kegs with no home.** When a delivery brings more kegs than the layout has spots for, the extras get stacked wherever there's room, often in the walkway. Every one of them gets moved again later, by hand, in a cold room.

**Blocked access paths.** Kegs and cases parked in the aisle narrow the route to the shelves. Staff step around product, or over it, while carrying heavy weight.

**Poor stocking and rotation.** When new deliveries can only go in front, older kegs get pushed to the back. First-in-first-out depends on a layout that allows it, not just on staff remembering it.

**Mixed keg and case storage.** Cases stacked on keg shelves, or kegs wedged under case shelves, leave neither product with a defined home. Counts get harder, and pulls get slower.

**Wasted vertical space.** Keg shelving that stops at the second tier leaves the top of the cooler empty while overflow piles up in the aisle.

**Too many moves per pull.** This is where the other five land. When the right keg sits behind or under the wrong one, a single pull becomes a sequence of lifts.

## **Do kegs need to be stored off the floor?**

In most places, no. The [FDA Food Code](https://www.fda.gov/food/fda-food-code/food-code-2022) is the model that state and local regulators use to write their own food safety rules. It generally requires food to be stored at least 6 inches off the floor. Section 3-305.11 carves out pressurized beverage containers, which may sit on a floor that is clean and not exposed to floor moisture.

That exception is why most of the coolers we outfit keep the bottom tier of kegs right on the floor. A few jurisdictions require kegs to be raised, and local inspectors enforce the version of the code their area has adopted. Where that applies, our Health Department keg shelves hold the lowest tier of kegs 6.5 inches off the floor.

Either way, what slows a cooler down is overflow. Kegs with no assigned spot end up in the aisle, where they cost lifting, access, and time.

## **How does custom beer shelving fix the workflow?**

Custom beer shelving works because it starts with the operation, not a catalog size. The design begins with how fast each keg moves, which keg sizes are on the line, how many cases share the space, and where deliveries come in. From there, each problem gets a direct fix:

- **A spot for every keg.** Every keg, including overflow, gets a defined position, on the floor tier or a shelf, so the aisle stays clear.
- **Open access paths.** With nothing parked in the aisle and corner runs built without extra posts, staff have a clear route to every shelf.
- **Rotation that holds.** Shelf depth is planned so older kegs stay in front and new stock loads behind them.
- **A home for kegs and cases.** Shelf depth and width follow the keg mix, so half-barrels and sixtels each have a defined spot, and cases get their own shelf.
- **Vertical space in use.** Case storage sits above the keg tiers, using the top of the cooler instead of the aisle.
- **One move per pull.** Fast-moving kegs take the most accessible positions, while slower kegs and backstock go deeper.

The result is a cooler that is faster to work, safer to move through, and easier to stock and count. The same planning that handles[overflow during peak demand](https://beercooler.kegracks.com/blog/peak-demand-cooler-design-for-high-volume-keg-storage) handles an ordinary Tuesday, and a well-planned layout can also[hold more product in the same footprint](https://beercooler.kegracks.com/blog/smaller-walk-in-cooler-footprint-pays-for-itself).

## **Where does a better beer cooler layout start?**

It starts with the cooler that exists today. We design keg storage around how each operation works, with a specific place for kegs, cases, and bottles, so aisles and corners stay clear.

For the most common walk-in sizes, our Pre-Planned Shelving Program offers layouts for kegs only, kegs with some cases, or mostly cases. For everything else, we design based on the cooler's actual dimensions and keg mix. The [Keg Cooler Capacity Calculator](https://beercooler.kegracks.com/keg-cooler-capacity-calculator) is a quick first step for sizing storage to weekly volume.

## Frequently Asked Questions About **Walk-In Cooler Organization**

#### **How do custom beer shelving units improve walk-in cooler organization?**

They give every keg size and case type a defined position, keep fast-moving kegs within reach, use vertical space, and keep aisles clear. Staff move fewer items per pull, and rotation holds because the layout supports it.

#### **Can kegs be stored on a walk-in cooler floor?**

Yes, in most places. Under FDA Food Code section 3-305.11, pressurized beverage containers may be stored on a floor that is clean and not exposed to floor moisture, and most of the coolers we outfit keep the bottom tier of kegs on the floor. Some local codes require kegs to be raised. For those coolers, our Health Department keg shelves hold the lowest tier of kegs 6.5 inches off the floor.

#### **What causes wasted space with standard beer shelving?**

Standard shelving is built to common sizes, not to a specific cooler or keg mix. That leaves empty space above the top keg tier, overflow in the aisle, and extra corner posts that block access.

#### **What is the best way to store mixed kegs and cases?**

Give each product its own position on the same unit, with case shelving above the keg tiers. Our Pre-Planned Shelving Program includes layouts for kegs only, kegs with some cases, and mostly cases.
